C hristmas traditions are comforting, but if there’s one thing we’ve learned from the coronavirus pandemic, it’s that we sometimes have to get creative and find newways of doing things. This is nothing new to vegans, who excel at modifying their families’ traditions and cherished recipes and creating even better versions that don’t harm animals. Most supermarkets now stock a variety of vegan options – from dairy-free butter to faux chicken – so swapping out ingredients is a snap. Golden Globe winning actor Brian Cox is all business on his hit show Succession . But Cox – who shares his home with two adopted cats, Pishi and Princess – shows his playful side in a new PETA video, in which he “interviews” Patches, a cat (since adopted) from London’s Mayhew animal shelter. He encourages everyone to adopt two cats, if possible: “I believe in cats in pairs. [T]hey are very independent, but they sometimes need companions.” And, he adds, “Remember to spay and neuter. That’s very important.”

‘Chicken’ Pot Pie Makes 6 servings
Green Bean and Mushroom Amandine Makes 4 servings
YOU’LL NEED 30 g nutritional yeast 60 g flour 80 ml vegetable oil
YOU’LL NEED 3 cloves garlic, minced
100 g sliced white mushrooms 3 Tbsp. minced fresh parsley 50 g shallots 2 Tbsp. olive oil 120 ml vegetable stock 450 g fresh French-cut green beans, with ends trimmed 80 ml white wine Salt and pepper, to taste 55 g slivered almonds, toasted
600 ml vegetable stock 1 /4 tsp. garlic powder 1 /2 tsp. salt 1 /4 tsp. pepper 140 g cubed white potatoes 75 g fresh or frozen sweetcorn 75 g fresh or frozen peas 75 g fresh or frozen diced carrots 225 g vegan chicken, roughly chopped 2 sheets vegan puff pastry dough, thawed according to package directions
METHOD • Preheat the oven to 375°F/200°C.
• In a large bowl, gently toss together the pears, apples, cranberries, sugar, cornflour, and 1 teaspoonful of the cinnamon. Transfer to a pie pan. • In a separate bowl, stir together the flour, oats, brown sugar, and remaining cinnamon. Cut in the cold vegan butter with a pastry cutter or fork until the mixture is crumbly. Spread evenly over the fruit. • Bake for 30 to 40 minutes, or until browned and bubbly. • Serve warm with a scoop of non-dairy vanilla ice cream.

METHOD • In a large skillet, sauté the garlic, mushrooms, parsley, and shallots in 1 tablespoonful of the olive oil over medium-low heat until the onions are translucent. • Add the stock, green beans, and wine then cover and simmer for 5 minutes. Season with the salt and pepper then continue simmering until the beans are tender and the liquid has evaporated. • Remove from the heat and stir in the remaining olive oil and the toasted almonds. Serve warm. Orchard Crumble Makes 6 servings
cats named Marshall and Bubbles. Marshall has 3 1 /2 legs and Bubbles was scared of everything, so no one wanted them, or another cat named Brandi who had lost most of her fur due to stress. All three still live together at the Sam Simon Center, PETA’s Virginia HQ, as happy as three peas in a pod.
METHOD • Preheat the oven to 400°F/190°C.
• In a large pot, combine the nutritional yeast and flour. Place over low heat and stir constantly until lightly toasted. Whisk in the oil then turn the heat up to medium and slowly add the stock while stirring until smooth and thick. Add the garlic powder, salt, and pepper and stir well. • Add all the veggies and vegan chicken. Reduce the heat to low and simmer, stirring frequently, until heated through, about 8minutes. • Roll out each sheet of puff pastry dough. Place one in the bottom of a pie pan. Fill with the veggies and “chicken” mixture then cover with the remaining dough. Cut off any excess dough and crimp the edges with a fork. • Bake for 20 minutes, or until the crust is golden brown.
